Yummy for the tummy!

Tonight I made my favorite fish recipe. It is melt in your mouth good, and I think it would be close to a sin, if not a sin, to keep it from you. Here it is and if you give it a try, let me know how you like it!!!

Parmesan-Baked Salmon:



1/4 cup mayonnaise
2 tbsp 100% grated parmesan cheese
1/8 tsp ground red pepper (cayenne)
4 salmon fillets (give or take..depending on how many people you have)
2 tsp lemon juice
10 ritz crackers crushed

preheat oven to 400

Mix mayo, cheese and pepper until well blended; set aside. Place salmon on foil lined shallow baking pan. Drizzle with lemon juice, top with cheese mixture. Spread evenly to cover salmon. Sprinkle with cracker crumbs.

Bake 12 to 15 minutes or until Salmon flakes easily with fork. Just let me tell you, I would go with the second because it DEFINITELY took longer than 12 to 15 minutes. It can put a hungry girl in agony, ha! And like I said, portions of ingredients will vary depending on how many people you're serving.

Squash and zucchini, mashed potatoes, and cottage cheese!!! SOOO yummy!!!!!! It did not disappoint! Hope you all enjoy!!!!

This is my room right now! I don't know how your room looks and this might not seem messy to you, but for me, this is way out of character. As you can see, the chair I think collapsed in exhaust from all the clothes piled on it and fell on yet another pile of clothes that needs to be put away, ha!!! Oh, the discombobulation of it all!

I need serious help people.... I've been totally over taken by the "Twilight Madness". I've already zipped through the first two, now it's on to the last two which I'm going to get this weekend and my friend is going tonight to get the movie when it goes on sale at Wal-Mart at midnight. I'm keeping my fingers crossed that she'll be able to get me a copy, that's if there's no rule that you can only get one or something. Ya'll, is there a place where I can get help for this??? :o)

P.S.
Geez people, you could have warned me that I'd need tissues when watching Fireproof. Watched it after dinner. What a precious movie!!

Totally making the salmon soon. Looks yummy. And my kids'll probably eat it because it has a Ritz cracker. And I'm laughing at the Twighlight comment because I just came back from Walmart and THE LINE of women was unbelievable.

Haha that is too funny. I guess the series must be THAT good. My sister is trying to convince my mom and I to go buy her the movie when it comes out tonight! :)

PS-I've heard such great things about Fireproof, I can't wait to see it.

Since I'm up so late - I actually was considering going down & getting the video myself...but the closest store is over 20 minutes away... twilight hopefully will be there tomorrow!!

Yum!! That looks awesome! I will definately be trying this next week!! I am in love with Twilight too and can't wait to watch the movie! Don't know when I will get to because I;m sure it will be backed up on my Netflix forever!! Let me know how you like it compared to the book! Have a great weekend:)

The fish looks awesome. I guess I should try that recipe before I totally give up Salmon altogether. I love fish, but for some reason, salmon is often times way to fishy tasting for my liking. However, with all of that yummy stuff on top, I think I could do it!! I'll let you know!

I am contemplating actually starting on Twilight, today. However, it's going be sooooo nice here and I really want to go for a nice long walk. Unfortunately, I might look a little silly trying to walk and read a HUGE book at the same time...so it might have to wait until a little later tonight! :)

Hopefully you got my message on Facebook. It was being weird last night, so I wasn't sure if it went through!

I'm totally stealing this recipe!! Your room looks familiar..ha! I finally got in gear yesterday and straightened up around here. Between March Madness and Twilight and being lazy because I'm on Spring Break, my house has turned into a wreck!!

That salmon looks amazing, but that mashed potatoes? That is what is really calling my name! What can I say, I'm a carb girl. :)

Fireproof WAS awesome, wasn't it? Better than I expected, and I'm so impressed that it was in the theater as long as it was.
