Thursday ramblings!

1. First things first, I realized I didn't take the time to thank you all for the kind thoughts and words after my Grandpa passed away. Thank you so much, meant the world. His funeral is next Thursday and I'm going to be speaking.



This was a quick notice they put in the paper, but a real obituary will be put out this Sunday. How do I even begin to sum up in words a presence that meant so much to my life? It's going to be such a wonderful celebration of his life.

2. On a lighter note, this little girl (aka: the cutest niece on the face of the planet) started ballet classes this week.



This is after her first class. She'll always be my favorite ballerina.

3. So I've been cooking the same doggone recipe (the only one I know how, haha), and it's time for me to move on to something different, haha!! My BFF made this for me not to long ago, and I think I'm going to give it a shot and try to make it myself here soon.

Sloppy Joe Casserole.
Here's the recipe!

INGREDIENTS
1 lb. lean ground beef
1/2 cup sliced green onions
1 (15.5-oz.) can sloppy joe sandwich sauce
1 (11-oz.) can Green Giant® Mexicorn® Whole Kernel Corn, Red and Green Peppers, undrained
1 (6-oz.) can Pillsbury® Grands!® Jr. Golden Layers® refrigerated buttermilk biscuits

DIRECTIONS
1. Heat oven to 375°F. In large skillet, brown ground beef with onions; drain. Stir in sandwich sauce and corn. Cook 2 to 3 minutes or until thoroughly heated, stirring occasionally.
2. Spoon mixture into ungreased 1 to 1 1/2-quart casserole. Separate dough into 5 biscuits; cut each in half. Arrange, cut side down, around outside edge of hot mixture with sides of biscuits touching.
3. Bake at 375°F. for 15 to 20 minutes or until biscuits are deep golden brown.

4. I'm going to Sea World this Saturday with my BFF, and can't wait!! I have a year pass and have to start taking advantage of it before the year is up!



5. I get my braces off this month!!! YAY!!!!!!! And you better bet a picture will be coming of these pearly whites!

6. I'm going to Vegas on September 23rd for a few days! Can't wait!!!!! It's going to be a blast. I know, Lauren in Vegas, this should be interesting!

7. Ellen DeGeneres is the new judge on American Idol. What do Ya'll think of that?



I would say she's not to knowledgable in music, but if anything, she'll bring lots of humor to the show : )

8. Can't believe tomorrow is September 11th, and that it will have been 8 years now! Do you all still remember exactly where you were and what you were doing on that day?

9. I wrote awhile back about my hair dilemma. I think I'm going to continue letting it grow out for right now. But boy does it need a trim, haha!

10. For those of you who might be wondering, I still haven't joined E-Harmony... I know, I know... don't know what's stopping me but I'm going to make it a priority to get signed up here very soon!

11. And thank heavens for a short week!!

My OCD self hates stopping at an odd number but I'm thinking this is enough randomness for one day, haha!!

Until you said it... I totally didnt realize tomorrow was Sept 11th!! crazy!!!!

I LOVE Ellen's going to be the host... cant wait to see how she deals with Simon!!!

And you are going to do amazing for your grandpa - I'm sure!

OH my... you are like me! I don't like odd numbers...only even! haha

I still remember where I was on Sept 11- biology class in my sophomore year of college!

Vegas sounds like a fun trip--and lucky you to stay at the Bellagio!!

I'm so jealous you are going to Vegas AND Sea World. I love Sea World! I hope you enjoy your vacay!

Lauren, I just now got caught up on your blog. I follow you on Twitter, so I knew about your grandpa, but haven't stopped by yet to tell you how sorry I am. Your words about him were BEAUTIFUL and I know from experience what a blessing it is to see God at work even in the darkest days of your life. Your grandpa was also blessed by having his loved ones there for him.

By the way, that recipe looks SO yummy. I'm thinking Dave might like that one!

And your posts about looking like your Mom and you in the 80s ... PRESH!!!

Enjoy your trip, I loved Las Vegas when I went last January! There is sooo much to see and do!

I'm sure you will have amazing words for your grandpa; your post about him was just beautiful and a great testament to his life.

I don't like odd numbers either :)

Aaaand lastly, I think I might do a post tomorrow on where I was on 9/11. It is still so memorable to me.

I think Ellen is a mistake. But, whatever!

Yea for the braces! I had them for a year a few years ago, and I know it stinks to have them as an adult. You look and feel 12 again!

Go for it on E-Harmony. You never know. I met my hubby on-line, though not on E-Harmony. But sill, I wouldn't have him or my kid with out the internet!

Wow. I found your blog through LPM and your post made me recheck to make sure I wasn't reading my own blog! You see - I just lost my grandfather too. He was 90. He got diagnosed with leukemia and was given a month to live. 3 weeks later - he was gone. Very dear to me. So I really know how you feel and am so sorry at your loss.

I am excited about Ellen! I don't normally watch AI (I know, I am the only person in the world who doesn't!) but she is sooooo funny!!!
